Ingredients:
¼ c butter
⅔ c rolled oats
⅔ c brown sugar, divided
¼ tsp ground cinnamon
¼ tsp ground allspice
⅔ c water
1 ½ c all-purpose flour
⅓ c rolled oats
4 tsp baking powder
2 tsp wheat germ
1 Egg, lightly beaten
1 c evaporated milk
1 ⅓ c of raisins
1 tbsp all-purpose flour
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Apply cooking spray in a muffin tan.
3. Place a skillet on the stove and turn the heat to medium.
4. Add butter and allow it to melt.
5. Add 2/3 cup of oats, cinnamon, allspice, and 1/3 cup of brown sugar. Stir and cook until brown.
6. Add the rest of the sugar and 2/3 cup of water. Stir until well blended. The texture of the sauce should become thick.
7. Remove the skillet from the heat and allow it to cool completely.
8. In a mixing bowl, add 1/3 cup of oats, flour, wheat germ, and baking powder. Stir until well mixed.
9. In another mixing bowl, add milk and egg. Beat until well mixed.
10. Create a small hole in the middle of the flour mixture, then pour in the egg and milk mixture as well as the cooked oatmeal. Mix until well blended.
11. Coat each raisin with flour, then add them into the batter. Stir until well combined.
12. Fill each cup with the batter.
13. Place them inside the preheated oven and bake for about 30 minutes or until done.
14. Remove from the oven and allow them to cool completely at room temperature.
15. Serve and enjoy!
