These cookies have always been a part of my family. My Grandma used to make these heavenly delights all the time. Luckily, she gave me the recipe so I get to share it with my kids and with you as well. Give it a try!
Ingredients:
Cookies:
2 cups white sugar
1 cup packed light brown sugar
1 cup unsalted butter, at room temperature
2 eggs
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
¼ teaspoon salt
2 cups old-fashioned rolled oats
1 ½ cups finely grated carrots
½ cup raisins
½ cup finely chopped walnuts
Cream Cheese Filling:
1 (8 ounces) package cream cheese, at room temperature
½ cup unsalted butter, at room temperature
1 cup confectioners’ sugar
1 teaspoon vanilla extract
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Line with parchment paper the baking sheets.
Step 3: In a medium mixing bowl, add the butter, white sugar, and brown sugar. Beat for 3 minutes or until well mixed and fluffy.
Step 4: Add in the vanilla extract and eggs. Beat until well mixed.
Step 5: In another mixing bowl, add in the nutmeg, flour, baking soda, cinnamon, ginger, baking powder, and salt. Whisk until well combined. Transfer the mixture into the butter mixture and beat until well blended.
Step 6: Add in the raisins, walnut, oats, and carrots. Stir until just mixed.
Step 7: Place inside the fridge to chill for 1 hour.
Step 8: Spoon the batter into the lined baking sheets. Leave 2-inches spaces between each cookie.
Step 9: Place inside the preheated oven and bake for 12 to 15 minutes or until the sides of the cookies turn golden brown.
Step 10: Remove from the oven and let it sit on a wire rack to cool.
Step 11: In a medium mixing bowl, add the cream cheese. Beat until soft. Add in the butter and beat until well blended. Finally, add vanilla extract and confectioner’s sugar. Beat until light for 30 seconds.
Step 12: Spread the frosting on top of 1 cookie, then top it with another cookie creating a sandwich. DO the same thing for the rest of the cookies.
Step 13: Serve and enjoy!
Notes:
You can add 1 cup of the raisins and walnuts instead of 1/2 cup.
