I am not a fan of tomatoes, but this recipe made me change my mind about them! This delicious Tomato Pie is so easy to make. In less than an hour, you will surely have the best pie ever! This will be the new favorite of your family. Enjoy!
Ingredients:
4 large tomatoes, peeled and sliced
1 c mayonnaise 205g
8 slices of cooked bacon, crumbled
1 9-inch pre-baked deep-dish pie shell I used Pillsbury
1 c grated mozzarella cheese 90g
1 c grated sharp cheddar cheese 85g
Salt and pepper
10 fresh basil leaves, chopped
3 green onions, chopped
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. In a bowl with boiling water, add the tomatoes and let them sit for at least 30 seconds.
3. Transfer the tomatoes to another bowl with iced water. Iced water will remove the peel of the tomatoes.
4. Slice the tomatoes, then put them in a colander. Add salt and drain for about 10 minutes.
5. Arrange one layer of the tomatoes onto the prepared crust. Season with pepper.
6. Top with 1/2 of the basil and onions. Repeat the process with the rest of the ingredients until everything is arranged in layers.
7. In a mixing bowl, add mayonnaise and cheese. Stir until well blended.
8. Add the mixture over the tomatoes and spread it evenly.
9. Scatter the crumbled bacon on top.
10. Place it inside the preheated oven and bake for about 30 minutes or until the top turns brown.
11. Remove the tomato pie from the oven and allow it to cool for a few minutes.
12. Slice into even servings.
13. Serve warm and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last for several days.
