These Tortilla Chip Enchiladas will surely satisfy all your cravings today! Oh, man, you are so in for a treat. My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! As perfect as this recipe already is, feel free to add more ingredients if you prefer. I am sure that you can do a lot to make this recipe even better. Ingredients:
4 ounces can of diced green chillies (drained)
1 pound ground beef (or shredded chicken)
3 c of shredded cheese
1 teaspoon ground cumin
1 bag of tortilla chips
1/2 c of salsa
1 large can (28 ounces) of red enchilada sauce
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Place a skillet on the stove and turn the heat to medium.
3. Add the ground beef and cook until brown. Discard excess grease.
4. Add the salsa, green chilis, and cumin. Stir until well mixed.
5. In a mixing bowl, add the tortilla chips and break them into small pieces.
6. Add the beef mixture on top of the tortilla chips.
7. Add the enchilada sauce into the bowl with the tortillas and stir until well mixed.
8. Add 1 cup of cheese and toss until well combined.
9. Apply cooking spray in a baking dish.
10. Transfer the enchilada mixture into the prepared baking dish and spread it evenly.
11. Scatter the rest of the shredded cheese over the enchilada mixture.
12. Cover everything with aluminium foil.
13. Place it inside the preheated oven and bake for about 50 minutes or until done.
14. Remove from the oven and allow it to cool for a few minutes at room temperature.
15. Serve warm and enjoy!
