2 medium sweet potatoes
1 tsp olive oil
1 1/4 tsp ground cumin divided
1/4 + 1/8 tsp salt
1/4 + 1/8 tsp ground pepper
3/4 lb lean (93%) ground turkey
4 garlic cloves minced
1 tsp chilli powder
1/2 tsp dried oregano
1/2 tsp paprika
1 1/4 c canned crushed tomatoes
1/4 c grated pepper Jack cheese
2 tbsp minced flat-leaf parsley
Step 1: Use a fork to pierce the entire sweet potatoes.
Step 2: Place the sweet potatoes inside the microwave and heat for 5 minutes or until fork-tender.
Step 3: Remove the sweet potatoes from the microwave and allow them to cool at room temperature.
Step 4: Slice the potatoes lengthwise.
Step 5: Remove the flesh out and put it in a medium bowl. Set aside the skins.
Step 6: Mash the potatoes with the back of a fork.
Step 7: Add in ½ teaspoon of cumin, ¼ teaspoon of salt, ¼ teaspoon of pepper, and olive oil. Stir until well blended.
Step 8: Distribute the mashed potatoes between the reserved potato skins and arrange them on a baking sheet.
Step 9: Place a large non-stick skillet on the stove and turn the heat to medium-high.
Step 10: Add in cooking spray and allow it to become hot.
Step 11: Add in the ground turkey and cook until brown and crumbly.
Step 12: Add in the chilli powder, garlic, oregano, ¾ teaspoon cumin, paprika, oregano, salt, and pepper. Stir and cook for 1 minute.
Step 13: Add in the crushed tomatoes and stir until well combined.
Step 14: Prepare the broiler and preheat.
Step 15: Distribute the turkey mixture between the sweet potato skins.
Step 16: Top each stuffed potato with grated cheese.
Step 17: Broil the stuffed potatoes for 30 seconds or until the cheese has melted completely.
Step 18: Remove from the broiler and sprinkle parsley on top of each stuffed potato.
Step 19: Serve and enjoy!
