Ingredients:
Turkey Breast
1/2 tsp salt
1/4 tsp black pepper
1-1.5-pound boneless turkey breast filet
1.5 c turkey or vegetable stock
Sauce
1 tsp minced garlic
2 c turkey stock
2 c cream – 10%-18%
1/4 c unsalted butter
1/4 tsp black pepper
3/4 tsp salt
1/4 c all-purpose flour
1/2 medium onion, finely diced
1 tsp Italian seasoning
To Assemble Tetrazzini:
1 c frozen peas
1 c shredded mozzarella cheese
375 grams high fiber white spaghetti (about 13 ounces), cooked just to al dente
Directions:
For the Turkey Breast:
1. Lay the turkey breast into a large skillet.
2. Pour the turkey stock over the turkey breast, then sprinkle salt and pepper to season.
3. Place the skillet on the stove, then turn the heat to medium-low.
4. Cover the skillet, then simmer the turkey breast for about 40 minutes or until fork-tender.
5. You can also add all the ingredients into a slow cooker, then cook for about 4 hours on a low setting.
6. Transfer the turkey onto a clean chopping board, then shred it into small pieces.
For the Sauce:
1. Place a large skillet on the stove and turn the heat to medium.
2. Add butter and allow it to melt.
3. Add the onion, then sauté for a few minutes until translucent.
4. Add garlic, then sauté for a minute or until aromatic. Season with salt, pepper, and Italian seasoning. Stir until well blended.
5. Add flour, then whisk and cook for a minute.
6. Add cream and turkey stock, then stir until well blended. Simmer for a few minutes until the texture of the sauce becomes thick.
For the Turkey Tetrazzini:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Apply cooking spray to a 9×13-inch baking dish.
3. Add the cooked pasta, shredded turkey, and peas into the prepared baking dish.
4. Pour the sauce on top of the pasta mixture, then toss until well coated. Sprinkle cheese on top.
5. Place it inside the preheated oven and bake for about 20 minutes or until the top turns golden brown.
6. Remove from the oven and allow it to rest for a few minutes at room temperature.
7. Serve and enjoy!
