Twice Baked Potato Casserole

Prep Time: 20 mins | Cook Time: 1 hr 35 mins | Total Time: 1 hr 55 mins | Yield: 8 Servings

This casserole dish is superb! The rich flavours in this luscious meal will surely make you very satisfied. Try it now!

Ingredients:

8 medium russet potatoes, about 4 pounds
4 tablespoons butter, melted
1/2 to 3/4 teaspoon salt
1/4 teaspoon pepper
3 cloves garlic, finely chopped
4 oz cream cheese, at room temperature
1/2 cup sour cream
2 cups shredded cheddar cheese
1/2 lb of bacon slices, cut into bits and fried
1/4 to 1/2 cup milk (if potatoes are too thick)
2 green onions, sliced

Directions:

Step 1: Prepare the oven and preheat to 220 degrees C or 425 degrees F.

Step 2: Line with foil a baking sheet.

Step 3: Use a fork to gently pierce the potatoes, then arrange them onto the lined baking sheet.

Step 4: Place the potatoes inside the preheated oven and bake for 1 hour.

Step 5: Remove the potatoes from the oven and let them sit at room temperature to cool.

Step 6: Cut each potato into two. Scoop the insides and pout them into a large mixing bowl together with cream cheese, butter, sour cream, garlic, salt, and pepper. Beat until well combined.

Step 7: Add milk, 1 cup of cheese, 1/2 of the green onions, and 1/2 of the bacon. Stir until well combined.

Step 8: Apply cooking spray in a 9×13-inch casserole dish.

Step 9: Transfer the potato mixture into the greased casserole dish.

Step 10: Add the rest of the bacon and cheese on top.

Step 11: Cover everything with foil.

Step 12: Place it inside the preheated oven and bake for 325 degrees F for 40 minutes or until done.

Step 13: Remove from the oven and sprinkle green onions on top.

Step 14: Serve and enjoy!
