7 medium red potatoes, baked
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pound bacon, cooked and crumbled
3 cups sour cream
2 cups mozzarella cheese, shredded
2 cups cheddar cheese, shredded
3 green onion, sliced
Step 1: Slice into 1-inch cuts the baked potatoes.
Step 2: Apply cooking spray in a 13×9-inch baking dish.
Step 3: Spread 1/2 of the sliced potatoes into the prepared baking dish.
Step 4: Season the potatoes with salt and pepper.
Step 5: Spread the crispy bacon over the potatoes.
Step 6: Spread 1/2 of the sour cream over the bacon.
Step 7: Top everything with 1/2 of the cheddar cheese and 1/2 of the mozzarella cheese.
Step 8: Repeat the process until everything is arranged in layers.
Step 9: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 10: Place the baking dish inside the preheated oven and bake for about 25 minutes or until the cheeses have melted completely.
Step 11: Remove the casserole from the oven and let it sit at room temperature to cool.
Step 12: Garnish the casserole with sliced green onions.
