Ingredients:
2 c V-8 juice
4 c chicken broth
1 c green beans, chopped
2 stalks of celery, diced
2 carrots, sliced
1 yellow onion, diced
1 c corn
2 tsp kosher salt
1/2 tsp coarse ground black pepper
1 large potato, peeled and diced
1 c peas
2 vine tomatoes, diced
2 cloves garlic, minced
1/4 c olive oil
Directions:
1. Place a large pot on the stove and turn the heat to medium.
2. Add olive oil and allow it to become hot.
3. Add the garlic, celery, and onions. Sauté for about 5 minutes or until aromatic and soft.
4. Add the remaining ingredients into the pan, then stir until mixed.
5. Allow the mixture to boil.
6. Turn the heat down to low, then simmer everything for about 30 minutes.
7. Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 days. When serving again, reheat over medium-low heat for a few minutes. Make sure to stir from time to time.
Leftover soup can last up to 5 to 6 months in the freezer.
Feel free to use fresh tomatoes for this recipe instead of canned tomatoes.
You can also add ground meat if you wish. If you have leftover chicken, that would be perfect!
You can use vegetable broth instead of chicken broth.
Add spinach or any leafy veggies 20 minutes before serving.
You can also add cooked pasta to make this a complete meal.
For a spicy version, try adding red pepper flakes or cayenne pepper.
