Ingredients:
For the noodles:
10 lasagna noodles
For the ricotta mixture:
1/2 tbsp olive oil
6 oz spinach (from 1 bag spinach)
1 (15 oz) container part-skim ricotta
1 Egg
½ tsp garlic powder
1/2 tsp salt
Freshly ground black pepper
For the pumpkin layer:
2 (15 oz) cans of pumpkin puree
½ c milk (I like unsweetened almond milk, but any milk will work)
¼ tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger
¼ tsp allspice
3/4 tsp salt
Freshly ground black pepper
For the layers:
3 c shredded mozzarella cheese, divided (approximately 12 oz)
1 c grated parmesan cheese, divided
To garnish:
Fresh chopped parsley or small sage leaves
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Apply cooking spray in a 9×13-inch baking pan.
Step 3: Place a large pot with water on the stove and turn the heat to high.
Step 4: Allow the water to boil, then add the lasagna noodles. Cook for about 5 minutes until al dente.
Step 5: Drain the pasta and transfer it onto a greased baking sheet.
Step 6: Place a medium skillet on the stove and turn the heat to medium.
Step 7: Add 1/2 tablespoon of olive oil and allow it to become hot.
Step 8: Add the spinach, salt, and pepper. Cook until wilted completely.
Step 9: Remove from the heat and transfer the spinach into a mixing bowl.
Step 10: Add the egg, ricotta, garlic powder, salt, and pepper into the bowl with the spinach.
Step 11: In a large mixing bowl, add the milk, pumpkin, ginger, nutmeg, allspice, cinnamon, salt, and pepper. Stir until well mixed.
To Assemble:
Step 1: Add 1 cup of the pumpkin mixture to the bottom of the prepared baking dish and spread it evenly.
Step 2: Top the pumpkin mixture with 5 cooked lasagna noodles. Arrange them, four in a vertical position and 1 horizontal.
Step 3: Add 1/2 of the spinach mixture over the noodles and spread it evenly.
Step 4: Sprinkle 3/4 cup of shredded mozzarella cheese on top.
Step 5: Add 1 cup of the pumpkin mixture over the cheese followed by 1/2 cup of Parmesan.
Step 6: Repeat the process until everything is arranged in layers.
Step 7: Cover the baking dish with aluminium foil.
Step 8: Place it inside the preheated oven and bake for about 25 minutes.
Step 9: Remove the cover and bake for another 20 minutes or until done.
Step 10: Remove from the oven, then sprinkle chopped parsley and more Parmesan cheese on top.
Step 11: Serve and enjoy!
