These delicious potato wedges are so good! Movie nights with my kids are always fun with these heavenly treats! Take a break from the usual French Fries! Ingredients:
Potatoes
1/2 c olive oil
1/4 c water
1 tablespoon oregano
8 ounces feta, crumbled
Whipped Feta
1 teaspoon paprika
10 Yukon potatoes
1/4 c olive oil
lemon zest
1-2 tablespoons honey
1/4 c whipped cream cheese
1 teaspoon Salt and Pepper
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Line with parchment paper a baking sheet.
3. Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
4. Slice the potatoes into wedges, then toss them into the pot with boiling water and cook for about 6 to 7 minutes.
5. Drain the potato wedges, then arrange them onto the prepared baking sheet.
6. Drizzle olive oil over the potato wedges.
7. Sprinkle paprika, salt, and pepper on top. Toss until well coated.
8. Place them inside the preheated oven and bake for about 15 minutes on each side or until the wedges are fork-tender and crispy.
9. In a food processor, add the whipped feta, crumbled feta, cream cheese, olive oil, water, zest, honey, and oregano. Pulse until well blended.
10. Transfer the mixture into a serving bowl.
11. Remove the potato wedges from the oven, then transfer them into a large serving bowl.
12. Garnish the wedges with a drizzle of olive oil and a sprinkle of oregano.
13. Serve immediately with the dip. Enjoy!
