These Yellow Squash Tots are the new favorites in our home! My family could not get enough of these heavenly treats that’s why I always make sure to have them at least once a week. Try this recipe now!
Ingredients:
For the Tots:
1/2 tsp salt
1/2 tsp garlic powder
3 small yellow squashes or zucchini – about 1-1.5-pound yellow squash
1/2 medium onion, finely chopped
4 ounces grated cheddar cheese or other meltable cheese (about 1/2 c grated)
1 Egg
3/4 c breadcrumbs
Optional: 2 tbsp – 1/4 c finely minced parsley leaves
Ground black pepper, to taste
For the Yogurt Dip:
1 tsp finely minced parsley (or dill, or 1/2 tsp dried parsley or dill)
¼ tsp salt, or to taste
1/4 tsp garlic powder (or use 1 small clove of garlic, minced)
⅓ c unsweetened Greek yoghurt
¼ tsp pepper, or to taste
2 tsp lemon juice (from about 1/2 lemon, or to taste)
Directions:
For the Tots:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Line with parchment paper or brush with olive oil on a large baking sheet.
3. Use a fine grater to grate the squash.
4. Add the grated squash into a colander, then sprinkle 1/2 tsp of salt. Allow the squash to sit for a couple of minutes, then squeeze it to remove the excess moisture. Feel free to use a cheesecloth for this step.
5. In a large mixing bowl, add all the ingredients for the tots. Stir everything until well combined and thick. Add more breadcrumbs if needed.
6. Use your clean hands to shape the mixture into small tots about 2 tbsp each.
7. Add the tots onto the prepared baking sheet and arrange them in a single layer. Make sure to leave a small space between each tater tot.
8. Place the tater tots inside the preheated oven and bake for 25 minutes or until golden brown.
9. Remove the tots from the oven and allow them to rest for about 5 minutes at room temperature.
10. Serve warm with the dip. Enjoy!
To Make the Dip:
1. Add all the ingredients for the dip into a mixing bowl. Stir until well blended.
