Ingredients:
2 tablespoons unsalted butter
1 small yellow onion, diced
1 head broccoli, chopped very small (florets only), about 3 c
1 c shredded carrots
32 ounces chicken broth (or vegetable broth)
½ teaspoon black pepper
1 teaspoon kosher salt
¼ teaspoon crushed red pepper flakes
¼ c cold water
¼ c cornstarch
2 c heavy whipping cream
3 c sharp cheddar cheese, shredded
Directions:
1. In a pressure cooker, add the butter, sliced onion, carrots, sliced broccoli, crushed pepper flakes, chicken broth, salt, and pepper. Stir until just mixed.
2. Cover and seal the pressure cooker.
3. Press the “High Pressure” cooker button and cook for about 4 minutes.
4. Do a quick release to release the pressure.
5. Add cornstarch and cold water into a small mixing bowl. Stir until dissolved completely.
6. Press the “Sauté” button on the pressure cooker, then add the dissolved cornstarch. Stir until well mixed.
7. Add the cheddar cheese and heavy whipping cream. Stir until well mixed.
8. Cover and cook for another 4 minutes.
9. Stir until well mixed.
10. Serve hot and enjoy!
