Mini Meatloaf Muffins

Prep Time: 10 mins | Cook Time: 25 mins | Total Time: 35 mins | Yield: 12 Servings

These delicious little treats will surely make your day extra special! Serve these bad boys pretty much any time of the day. Enjoy!

Ingredients:

1 1/2 lb lean ground beef (or ground turkey)
2/3 c panko bread crumbs
1/2 c onion, chopped
1 tbsp barbecue sauce
1 tbsp mustard
1/2 tsp garlic powder
1 1/2 tsp chilli powder
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 Egg, lightly beaten

Meatloaf sauce:

1/3 c light brown sugar
1/2 c ketchup
2 tsp Dijon mustard
1/4 tsp ground nutmeg

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Add the ground beef, onion, breadcrumbs, mustard, 1 tablespoon of barbecue sauce, garlic powder, egg, chilli powder, salt, and pepper in a large mixing bowl. Use your hands to mix until well combined.

Step 3: Fill each of the 12 muffin tin cups with the mixture.

Step 4: Place them inside the preheated oven and bake for about 15 minutes or until done.

Step 5: Meanwhile, add all the ingredients for the sauce in a small mixing bowl. Stir until well combined.

Step 6: Remove the meatloaf from the oven and wipe them clean with paper towels to discard any grease.

Step 7: Top each meatloaf with the sauce.

Step 8: Put them back inside the oven and bake for 10 to 15 minutes more or until done.

Step 9: Remove from the oven and allow them to cool for a few minutes.

Step 10: Serve and enjoy!

Note:

These Mini Meatloaf Muffins are best served with mashed potatoes and more sauce!
