Ingredients

For the cake

  • 2 cups all-purpose flour substitute with 1:1 gluten-free flour blend if needed
  • 2 cups unsweetened applesauce homemade provides 30% more flavor depth
  • 2 cups granulated sugar can use 1½ cups for a less sweet version
  • 1/2 cup butter softened (or ½ cup coconut oil for dairy-free option)
  • 2 large eggs room temperature
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup raisins optional, can substitute with dried cranberries or chopped dates
  • 1 cup chopped walnuts optional, pecans make an excellent alternative
  • 1 teaspoon vanilla extract

For the optional glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or apple cider
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or bundt pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes.
  • Add eggs one at a time, beating well after each addition. Stir in the applesauce and vanilla extract until thoroughly combined.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  • If using raisins and nuts, gently fold them into the batter.
  • Pour the batter into your prepared pan, spreading evenly.
  • Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  • For the optional glaze, whisk together powdered sugar, milk, and vanilla until smooth, then drizzle over the cooled cake.

Notes

For best results, use unsweetened applesauce. Homemade applesauce will provide more flavor depth.
Toss raisins in 1 tablespoon of flour before adding to prevent them from sinking to the bottom of the cake.
To check for doneness, look for the cake pulling away slightly from the pan edges and a clean toothpick when inserted.
Pre-slice before freezing to allow for individual servings without thawing the entire cake.
