Ingredients

Main Ingredients

  • 1 whole cabbage fresh, firm
  • olive oil for drizzling
  • garlic minced
  • lemon zested
  • salt
  • black pepper freshly ground
  • walnuts chopped
  • Parmesan cheese grated, optional for garnishing

Instructions

  • Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Cut the cabbage into 3/4-inch thick steaks, making sure each slice retains part of the core to hold it together.
  • Arrange the steaks on the prepared baking sheet, drizzle with olive oil, and season with minced garlic, salt, and pepper on both sides.
  • Bake in the preheated oven for 25-30 minutes, flipping halfway through until the edges are crispy and the steaks are tender.
  • Garnish the baked steaks with chopped walnuts and, if desired, sprinkle with grated Parmesan cheese before serving.

Notes

This recipe is naturally gluten-free. For a vegan variant, omit the Parmesan or use a vegan alternative. For extra crispiness, broil the steaks for the last few minutes of baking.
