Ingredients

  • 4 ham steaks approximately 8 oz each
  • 3/4 cup dark brown sugar packed
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 tablespoon butter
  • 1 pinch black pepper
  • 2 tablespoons bourbon or rum optional

Instructions

  • Pat the ham slices dry with a paper towel. If your ham slices are particularly thick (more than ½ inch), score the edges to prevent curling during cooking.
  • In a bowl, combine the brown sugar, maple syrup, Dijon mustard, apple cider vinegar, cinnamon, and cloves. Whisk until the mixture reaches a smooth consistency. If using, stir in the bourbon or rum.
  • Heat a large skillet over medium-high heat. Once hot, add the ham slices and sear for 2-3 minutes per side until you get caramelized edges. Work in batches if necessary to avoid overcrowding.
  • Reduce the heat to medium-low and pour the glaze mixture over the ham slices. Add the tablespoon of butter. Let everything simmer gently for 3-4 minutes, occasionally spooning the glaze over the ham.
  • When the glaze has thickened to a syrupy consistency that coats the back of a spoon, remove from heat. Let the ham slices rest in the glaze for 2 minutes before serving.

Notes

For a lighter version, substitute half the brown sugar with monk fruit sweetener and use low-sodium ham slices. The glaze can be prepared up to 3 days in advance and stored in the refrigerator. Leftovers will keep in an airtight container in the refrigerator for up to 4 days, or can be frozen for up to 2 months.
