Ingredients

Core Vegetables

  • 1/2 head of green cabbage, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • medium onion, diced
  • 2 garlic cloves, minced

Additions

  • 1 green bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp dried basil
  • 1/2 smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste

Optional Add-ins

  • 1 zucchini, chopped
  • 1 cup spinach or kale, chopped
  • pinch red pepper flakes

Instructions

  • In a large pot, heat olive oil over medium heat. Sauté onion, garlic, celery, and carrots for 5 minutes.
  • Stir in cabbage, bell pepper, tomatoes, broth, thyme, basil, paprika, salt, and pepper.
  • Bring to a boil, then simmer covered for 20-25 minutes until vegetables are tender.
  • If using zucchini or greens, add during the last 5 minutes of cooking.
  • Ladle into bowls and serve warm.

Notes

This soup can be stored in the refrigerator for up to 5 days or frozen for 3 months. It's customizable with various vegetables and optional add-ins to suit your preferences.
