Ingredients

Potatoes

  • 3 cups cut into chunks and boiled

Cheese Sauce

  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 2 cups milk
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/2 lb Velveeta cheese cut into pieces
  • 1/2 cup Cheddar cheese shredded

Smoked Sausage

  • 1 lb smoked sausage cut lengthwise and then into slices
  • 1/8 tsp paprika

Instructions

  • Preheat the oven to 350 degrees. Mix the boiled potatoes and sliced sausage in a well-greased 9x13 baking dish.
  • In a saucepan over medium heat, melt the butter. Whisk in the flour and sauté for 1 minute. Stir in the milk until smooth. Add salt, pepper, and Velveeta, stirring until melted.
  • Pour the cheese sauce over the potatoes and sausage, stirring to combine. Sprinkle cheddar cheese and paprika on top. Bake for 35-40 minutes. Let it sit for 10 minutes before serving. Enjoy the cheesy goodness!

Notes

For leftovers, store the casserole in an airtight container in the refrigerator for up to 3 days. You can also freeze individual portions for up to 3 months. Reheat in the oven or microwave until warmed through.
