Ingredients

White Meat Chicken

  • 3 cans drained white meat chicken 5 oz each
  • 1 can Rotel (tomatoes and green chilies) 10 oz
  • 1 can tomato paste 6 oz
  • 1 can whole kernel corn 15.25 oz
  • 1 can beans (chili beans) 15.5 oz
  • 1 box chicken broth 32 oz
  • 1-2 packages taco seasoning
  • 1 packet dry ranch dressing mix

Onion and Jalapeno

  • chopped onion
  • jalapenos

Cream Cheese and Grated Cheese

  • 8 oz cream cheese
  • grated cheese

Instructions

  • Combine all ingredients except cream cheese and bring to a boil.
  • Reduce heat and simmer for about 30 minutes before adding cream cheese.
  • Top with grated cheese and serve hot with tortilla chips.

Notes

To store leftovers, cool completely and refrigerate for up to 3 days or freeze for longer shelf life. Reheat with water or broth for desired consistency.
