Ingredients

  • 1 cup unsalted butter room temperature
  • 1/2 cup powdered sugar sifted
  • 1/4 tsp salt
  • 2 cups all-purpose flour
  • 1 cup butterscotch chips
  • 1/2 cup pecans finely chopped
  • rum extract
  • 1 tbsp milk

Instructions

  • Cream together butter, powdered sugar, and salt until fluffy.
  • Gradually add flour, mixing until smooth.
  • Stir in butterscotch chips and chopped pecans.
  • Shape dough into balls and place on a cookie sheet.
  • Bake at 325°F for 15-20 minutes until firm but not browned.
  • Mix powdered sugar with rum extract and milk to make a glaze.
  • Glaze cookies and sprinkle with pecans. Allow to set before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze unglazed cookies for longer storage.
