Ingredients

Canned Salmon

  • 14.75 oz canned salmon drained and flaked
  • 1 large egg
  • 1/2 cup breadcrumbs or cracker crumbs

Vegetables and Seasonings

  • 1/4 cup onion finely chopped
  • 1/4 cup bell pepper finely chopped
  • 1 clove garlic minced
  • 1 tbsp fresh herbs (optional) finely chopped
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Cooking Oil

  • 2 tbsp olive oil

Instructions

  • Drain and flake the canned salmon in a bowl.
  • Mix flaked salmon, egg, breadcrumbs, onion, bell pepper, garlic, herbs, lemon juice, salt, and pepper in a bowl.
  • Shape the mixture into 4 patties.
  • Heat olive oil in a skillet over medium heat. Cook patties until golden brown, about 3-4 minutes per side.

Notes

Salmon patties can be stored uncooked in the fridge for up to 2 days or in the freezer for up to 3 months for quick meals.
