Instructions
In a large skillet, cook the ground beef with the diced onion and minced garlic over medium heat until the beef is browned and the onion is soft. Drain any excess fat.
In a mixing bowl, whisk together the cream of mushroom soup, sour cream, and milk until smooth. Stir this mixture into the cooked beef.
Add the corn and black beans to the beef mixture and stir to combine.
Grease a 9x13 casserole dish. Layer half of the tater tots evenly across the bottom. Spread half of the beef mixture over the tater tots, then sprinkle half of the shredded cheese on top.
Repeat the layers with the remaining tater tots, beef mixture, and cheese.
Preheat the oven to 350°F (175°C). Bake the casserole for 30-35 minutes until the top is golden and bubbly.
Let the casserole cool for 5 minutes before serving.
