Creamy Mushroom Soup Ingredients

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb fresh mushrooms, sliced
  • 1 tsp dried thyme
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 tbsp all-purpose flour
  • 1/4 cup Parmesan cheese, grated optional, for extra richness
  • salt and black pepper, to taste
  • fresh parsley, chopped for garnish

Instructions

  • Step 1: Prep the Ingredients
    • In a large pot, melt the butter with olive oil over medium heat.
    • Add onions and garlic, sauté until translucent.
    • Add mushrooms and thyme, cook until mushrooms are softened.
  • Step 2: Cook the Soup
    • Pour in the broth and bring to a simmer.
    • In a small bowl, mix flour with some broth to create a slurry. Stir into the soup to thicken.
    • Reduce heat, stir in cream and Parmesan cheese.
  • Step 3: Season and Serve
    • Season with salt and pepper to taste.
    • Serve hot, garnished with chopped parsley.

Notes

Store any leftover soup in an airtight container in the refrigerator. It can be reheated on the stovetop or in the microwave. If freezing, let the soup cool completely before transferring to a freezer-safe container.
