Ingredients

Mushroom and Spinach Filling

  • olive oil
  • 1 onion
  • 3 cloves garlic
  • 8 oz mushrooms
  • 8 oz spinach
  • 1/2 tsp dried thyme
  • salt
  • pepper

Creamy White Sauce

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/2 cup Parmesan cheese
  • 1/4 tsp nutmeg
  • salt
  • pepper

Assembly

  • 12 sheets lasagna noodles
  • 1 cup ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  • Step 1: Prepare the Mushroom and Spinach Filling: Sauté onions and garlic, add mushrooms and spinach, season with thyme, salt, and pepper.
  • Step 2: Make the Creamy White Sauce: Melt butter, stir in flour, slowly whisk in milk, add Parmesan cheese, nutmeg, salt, and pepper.
  • Step 3: Assemble the Lasagna: Layer noodles, mushroom and spinach filling, white sauce, ricotta, mozzarella, and Parmesan. Repeat layers.
  • Step 4: Bake: Cover with foil, bake until bubbly, uncover, and bake until cheese is golden brown.

Notes

To store leftovers, cover the lasagna with foil and refrigerate for up to 3 days. Reheat in the oven or microwave until heated through. For longer storage, freeze individual portions in airtight containers.
