Cut the mozzarella into 1-inch cubes if using a block. If using mini mozzarella balls, pat them dry thoroughly with paper towels.
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with all the herbs and seasonings.
Dredge each cheese cube first in flour (shaking off excess), then dip in egg, and finally coat thoroughly in the seasoned breadcrumbs. For extra crispiness, repeat the egg and breadcrumb steps for a double coating.
Place the breaded cheese bites on a parchment-lined baking sheet and freeze for 15-20 minutes.
Heat oil in a deep pot to 350°F (175°C). Working in batches of 5-6 pieces, fry the cheese bites for 1-2 minutes until golden brown.
Remove with a slotted spoon and drain on paper towels. Serve immediately with marinara sauce or other dipping options.
