Ingredients

Cheese and Breading

  • 16 oz fresh mozzarella cheese cut into 1-inch cubes or mini mozzarella balls
  • 1 cup all-purpose flour or gluten-free substitute
  • 3 large eggs beaten
  • 2 cups Italian-seasoned breadcrumbs panko works for extra crunch

Seasonings

  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes adjust to taste
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper

For Frying and Serving

  • 4 cups vegetable oil for frying
  • marinara sauce for dipping (optional)

Instructions

  • Cut the mozzarella into 1-inch cubes if using a block. If using mini mozzarella balls, pat them dry thoroughly with paper towels.
  • Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with all the herbs and seasonings.
  • Dredge each cheese cube first in flour (shaking off excess), then dip in egg, and finally coat thoroughly in the seasoned breadcrumbs. For extra crispiness, repeat the egg and breadcrumb steps for a double coating.
  • Place the breaded cheese bites on a parchment-lined baking sheet and freeze for 15-20 minutes.
  • Heat oil in a deep pot to 350°F (175°C). Working in batches of 5-6 pieces, fry the cheese bites for 1-2 minutes until golden brown.
  • Remove with a slotted spoon and drain on paper towels. Serve immediately with marinara sauce or other dipping options.

Notes

The freezing step is crucial to prevent the cheese from melting too quickly during frying. For best results, ensure your cheese is thoroughly coated with no gaps in the breading.
For a healthier alternative, you can air-fry these bites at 375°F for 6-8 minutes instead of deep-frying.
These are best enjoyed immediately after cooking when the cheese is at its most stretchy and delicious!
