Ingredients

  • 6 cups Russet Potatoes peeled and diced
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 4 cups Chicken Broth
  • 1/2 tsp Smoked Paprika optional
  • 8 oz Cream Cheese softened and cubed
  • 1 1/2 cups Shredded Cheddar Cheese
  • 1 cup Heavy Cream
  • 1/2 cup Sour Cream
  • 1/2 cup Cooked Bacon crumbled

Instructions

  • Add diced potatoes, onion, garlic, chicken broth, salt, pepper, and smoked paprika to the Crock Pot. Stir well to combine.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the potatoes are tender.
  • 30 minutes before serving, add cream cheese, heavy cream, and shredded cheddar. Stir until melted and soup is creamy. Then, mix in sour cream and crumbled bacon.
  • Ladle into bowls and top with shredded cheddar cheese, crumbled bacon, and chopped green onions or chives for extra flavor.

Notes

Store leftovers in the fridge for up to 4 days. Reheat gently on the stovetop or in the microwave. Enjoy with crusty bread or garlic toast!
