Ingredients

  • Onion
  • 2.5 lbs boneless skinless chicken thighs

Cream of Chicken Soup

Cream of Celery Soup

  • Fresh Parsley
  • 1 tsp poultry seasoning
  • 1 cup chicken broth

Refrigerated Biscuits

  • Frozen Mixed Vegetables
  • black pepper to taste

Instructions

  • Layer chopped onion at the bottom of the crockpot.
  • Arrange chicken thighs on top of the onion.
  • In a mixing bowl, combine cream of chicken soup, cream of celery soup, parsley, poultry seasoning, and black pepper.
  • Pour the mixture over the chicken thighs.
  • Add chicken broth to the crockpot.
  • Cook on high for 5 hours without lifting the lid.
  • After 4 hours, add defrosted mixed vegetables and stir well.
  • Flatten and slice refrigerated biscuits, layer on top of the chicken mixture.
  • Cook for an additional hour until the biscuits are cooked.

Notes

If you have leftovers, store them in an airtight container in the refrigerator. When reheating, add a splash of chicken broth to maintain the consistency of the dumplings. This dish also freezes well, so you can portion it out for future meals.
