Ingredients

  • 1 pound lean ground beef 90% lean recommended
  • 1 medium onion finely chopped (about 1 cup)
  • 2 cloves garlic minced
  • 1 cup long-grain white rice uncooked
  • cups beef broth low-sodium preferred
  • 1 can condensed cream of mushroom soup 10.75 oz
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • salt and pepper to taste
  • cups shredded cheddar cheese divided
  • 1 cup frozen mixed vegetables optional

Instructions

  • Preheat your oven to 350°F (175°C). Lightly coat a 9x13 baking dish with cooking spray if not using an oven-safe skillet.
  • In a large skillet over medium-high heat, brown the ground beef, breaking it into small pieces as it cooks. When it's about halfway done (after about 3-4 minutes), add the chopped onion and garlic.
  • Continue cooking until the meat is no longer pink and onions are translucent. Drain any excess fat.
  • Add the uncooked rice to the beef mixture and stir to combine.
  • Pour in the beef broth, condensed soup, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper. If using frozen vegetables, add them now. Stir everything until well combined and bring to a gentle simmer.
  • Fold in 1 cup of the shredded cheese, stirring until it's evenly distributed throughout the mixture.
  • If using an oven-safe skillet, simply cover it with aluminum foil. If using a baking dish, transfer the mixture to the prepared dish and cover with foil.
  • Bake for 30 minutes at 350°F.
  • Remove the foil, sprinkle the remaining ½ cup of cheese on top, and bake uncovered for an additional 5-10 minutes until the cheese is bubbly and starting to golden.
  • Allow the casserole to rest for 5 minutes before serving.

Notes

For a healthier version, consider using brown rice (adjust cooking time), ground turkey instead of beef, or adding extra vegetables. This casserole freezes wonderfully - perfect for meal prep! You can assemble it ahead of time and refrigerate for up to 24 hours before baking.
