peeled, cored, and diced

Instructions
Mix flour and salt in a large bowl. Cut in the shortening until the mixture resembles gravel. Gradually add ice water and mix until a dough forms.
Roll the dough into a disc and refrigerate for at least 15 minutes.
Cook diced apples with butter, sugar, and spices until soft. Thicken with a slurry of corn starch and water.
Roll out the chilled dough and cut into 5-inch circles.
Place a spoonful of apple filling on one side of each dough circle, fold over, and crimp edges with a fork.
Fry the pies in oil heated to 375 degrees F until golden. Drain and apply a glaze.
