Instructions

  • Line a baking sheet with parchment paper, ensuring you have at least a 1-inch border around all edges. This prevents messy overflow and makes removal easier after freezing.
  • In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Whisk until completely smooth, ensuring no sweetener pockets remain.
  • Pour the yogurt mixture onto the prepared baking sheet and use a spatula to spread it evenly to about ¼-inch thickness.
  • Scatter your berries, chopped pistachios, chia seeds, and coconut evenly across the yogurt surface. Gently press larger pieces into the yogurt to ensure they adhere when frozen.
  • Place the baking sheet in the freezer, ensuring it sits flat. Freeze for 3-4 hours or until completely solid.
  • Once fully frozen, break into pieces and serve immediately or store in an airtight container.

For dairy-free: Use coconut yogurt or almond milk yogurt
For sugar-free: Replace honey with monk fruit sweetener or stevia
