Ingredients

  • 1 sleeve saltine crackers about 40 crackers, coarsely crushed
  • 3 large ripe tomatoes diced (about 3 cups)
  • 4 green onions thinly sliced (white and green parts)
  • 1 cup mayonnaise Duke's is traditional
  • 2 hard-boiled eggs peeled and chopped
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder optional
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions

  • Dice the tomatoes into medium-sized chunks, being sure to capture all the flavorful juices.
  • In a large bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, pepper, and garlic powder if using. Whisk until smooth and creamy.
  • Add the diced tomatoes, sliced green onions, and chopped hard-boiled eggs to the dressing. Gently fold everything together until evenly coated.
  • Just before serving, add the crushed saltine crackers to the mixture. Stir gently but quickly to incorporate them throughout the salad.
  • Cover the salad and refrigerate for about 30 minutes before serving to allow the flavors to meld together.
  • Garnish with fresh parsley just before serving.

Notes

For best results, add the crackers just before serving to maintain some texture. If preparing ahead, store the cracker mixture and tomato-mayo mixture separately until ready to serve.
Consider using a mix of tomato varieties for extra flavor - Roma tomatoes provide structure while cherry tomatoes add bursts of sweetness.
For a lighter version, you can substitute half the mayonnaise with Greek yogurt.
