German Sauerkraut
3Tbspbutter
1mediumGranny Smith applepeeled and diced
1smallonionslivered
2cupscold-pack sauerkrautrinsed and drained
1/4cuplight brown sugar
1/2cuplight brown beer
1/8tspblack pepper
1/2tspcaraway seed(optional)
Bratwurst
6good-quality bratwurst
1 1/2cupswater
2Tbspbutter
Bacon Onion Potatoes
3slicesbacon
1/4cuponiondiced
1/2cupbalsamic vinaigrette dressing
4smallred potatoessliced 1/4" thick
3Tbspbrown sugar
1/2tspseasoned salt
1/4tspblack pepper
Instructions
In a large skillet, melt butter and sauté apples and onions until caramelized.
Add sauerkraut, brown sugar, and beer. Season with black pepper and optional caraway seed. Cook over low heat until caramelized.
In another skillet, cook bratwurst with water and butter until browned.
For the potatoes, cook bacon until crispy. Add onions and balsamic vinaigrette and caramelize. Mix in potatoes, brown sugar, seasoned salt, and pepper. Cook until potatoes are tender.
Plate the sauerkraut, bratwurst, and potatoes together. Serve warm and enjoy!
Notes
Refrigerate leftovers in an airtight container and reheat as needed. To create a vegetarian version, replace bratwurst with plant-based sausage and use vegetable broth for potatoes.
