Meringue

large egg whites

sugar

teaspoon
cream of tartar or baking powder
Instructions
Combine all pie filling ingredients in a saucepan.
Cook until thickened and bubbly.
Pour the mixture into the pre-baked pie shell.
Beat egg whites until stiff peaks form.
Gradually add sugar while continuing to beat.
Add cream of tartar and vanilla if desired.
Spread the meringue over the pie filling.
Bake the pie at 400 degrees for 5-8 minutes, or until the meringue is lightly browned.
Allow the pie to cool on a wire rack before serving.
Notes
To store the pie, cover it loosely with plastic wrap or foil and refrigerate. It is best enjoyed within a day or two of baking.
