Ingredients

  • 1 1/2 cups sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup unsweetened cocoa
  • 3 large egg yolks
  • 2 cups evaporated milk or milk
  • 1/2 stick butter
  • pre-baked pie shell

Meringue

  • 3 large egg whites
  • 3 tablespoons sugar
  • 1/8 teaspoon cream of tartar or baking powder

Instructions

  • Combine all pie filling ingredients in a saucepan.
  • Cook until thickened and bubbly.
  • Pour the mixture into the pre-baked pie shell.
  • Beat egg whites until stiff peaks form.
  • Gradually add sugar while continuing to beat.
  • Add cream of tartar and vanilla if desired.
  • Spread the meringue over the pie filling.
  • Bake the pie at 400 degrees for 5-8 minutes, or until the meringue is lightly browned.
  • Allow the pie to cool on a wire rack before serving.

Notes

To store the pie, cover it loosely with plastic wrap or foil and refrigerate. It is best enjoyed within a day or two of baking.
