Ingredients

  • 1 cup butter room temperature
  • 1 cup white sugar
  • 1 cup brown sugar firmly packed
  • 2 large eggs well-beaten
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 1/2 cups all-purpose flour
  • 3 cups quick oatmeal
  • 2 cups coconut or nuts, raisins, chocolate chips

Instructions

  • Cream together butter, white sugar, and brown sugar in a large bowl.
  • Mix in well-beaten eggs and vanilla to the butter mixture.
  • Combine salt, baking soda, flour, oatmeal, and coconut in a separate bowl.
  • Add the dry ingredients to the butter mixture and mix until well combined.
  • Fold in nuts, chocolate chips, raisins, or dates according to your preference.
  • Use a cookie scoop to place dough on a baking sheet or refrigerate for slicing. Bake at 375°F for 10-12 minutes.
