  • 1 pound Italian sausage links mild or hot, depending on preference
  • 2 large bell peppers mix of red, yellow, and orange for visual appeal
  • 1 large sweet onion cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes optional
  • salt and freshly ground black pepper to taste
  • 8-10 wooden or metal skewers

Instructions

  • If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  • Parboil the sausages in simmering water for about 5 minutes. This ensures the sausages cook evenly on the grill without burning.
  • Let the sausages cool slightly, then slice into 1-inch pieces. Skip the parboiling step if using pre-cooked sausages.
  • Cut bell peppers and onions into chunks roughly the same size as your sausage pieces (approximately 1-inch squares).
  • Place all vegetables in a large bowl. Drizzle with olive oil, then sprinkle with oregano, garlic powder, red pepper flakes (if using), salt, and pepper. Toss until evenly coated.
  • Alternate pieces of sausage, bell peppers, and onion on each skewer. Leave a small space between items to ensure even cooking.
  • Preheat your grill to medium-high heat (approximately 375-400°F).
  • Place the skewers on the grill and cook for 10-12 minutes, turning every 3-4 minutes to ensure even browning.
  • Skewers are done when the sausage reaches an internal temperature of 160°F and vegetables have slight char marks.

Notes

For a lighter option, substitute turkey or chicken sausage for Italian sausage.
Add zucchini or mushrooms for additional vegetable variety.
For meal prep, assemble raw skewers up to 24 hours in advance and store covered in the refrigerator.
These skewers can also be cooked in an oven at 400°F for 15-20 minutes if you don't have access to a grill.
