Beef Stew Meat
- stew meat trimmed and dried
- 3 carrots sliced
- 2 stems fresh thyme
- 1 can Guinness beer
- 1 cup frozen pearl onions
- 1 cup water
- 1/4 cup all-purpose flour
- 1/4 cup honey
- salt and pepper to taste
Trim and brown the stew meat in a large pot.
Add the sliced carrots to the pot once the meat is browned.
Cover the meat and carrots with Guinness and simmer for about an hour until the meat is tender.
Add the pearl onions and fresh thyme to the pot, and continue to simmer for an additional 30 minutes.
Mix flour and water in a bowl until smooth, then slowly add it to the stew to thicken the broth.
Add honey, salt, and pepper to taste. Adjust seasonings as needed and serve the stew over creamy mashed potatoes.
