Ingredients

Beef Stew Meat

  • stew meat trimmed and dried
  • 3 carrots sliced
  • 2 stems fresh thyme
  • 1 can Guinness beer
  • 1 cup frozen pearl onions
  • 1 cup water
  • 1/4 cup all-purpose flour
  • 1/4 cup honey
  • salt and pepper to taste

Instructions

  • Trim and brown the stew meat in a large pot.
  • Add the sliced carrots to the pot once the meat is browned.
  • Cover the meat and carrots with Guinness and simmer for about an hour until the meat is tender.
  • Add the pearl onions and fresh thyme to the pot, and continue to simmer for an additional 30 minutes.
  • Mix flour and water in a bowl until smooth, then slowly add it to the stew to thicken the broth.
  • Add honey, salt, and pepper to taste. Adjust seasonings as needed and serve the stew over creamy mashed potatoes.
