Ingredients

Main Ingredients

  • 4 cups fresh watermelon cubed and seedless (about half a medium watermelon)
  • 2 tablespoons fresh lime juice approximately 1 medium lime
  • 1-2 tablespoons honey or agave nectar optional, depending on watermelon sweetness
  • 1 pinch sea salt enhances sweetness

Optional Additions

  • 1/4 cup fresh mint leaves for a cooling effect
  • 1 tablespoon lime zest finely grated, for extra citrus flavor
  • 2 tablespoons coconut milk for a creamy texture

Instructions

  • Cut your watermelon into small cubes, removing any seeds. The smaller the cubes, the easier they'll blend. Choose a watermelon that sounds hollow when tapped for optimal sweetness.
  • Place watermelon chunks, lime juice, and optional honey in a blender. Pulse until smooth but not overly processed—about 30-45 seconds. Add the pinch of salt.
  • For ultra-smooth popsicles, strain the mixture through a fine-mesh sieve to remove pulp. This step is optional but creates a more commercial-like texture.
  • Pour the watermelon mixture into popsicle molds, leaving about 1/4 inch at the top as the liquid will expand when frozen.
  • Insert popsicle sticks and freeze for at least 4 hours, preferably overnight. If your molds don't have built-in sticks, freeze for 1.5 hours first, then insert sticks.
  • To remove popsicles, run warm water over the outside of the mold for about 15 seconds, then gently pull the popsicles out.

Notes

For the best results, choose a ripe watermelon that sounds hollow when tapped and has a creamy yellow spot (indicating it ripened on the ground).
Once frozen, popsicles can be removed from molds and stored in airtight containers or freezer bags with parchment paper between layers for up to 3 weeks.
For a more gourmet treat, try dipping the frozen popsicles in melted dark chocolate and freezing again, or serve with a side of tajín seasoning for a Mexican-inspired flavor combination.
