Ingredients

Main Ingredients

  • 1 lb Italian sausage mild or spicy, as preferred
  • 12 oz rigatoni pasta or any preferred pasta
  • 3 cups baby spinach

For the Sauce

  • 1 cup heavy whipping cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese freshly grated
  • 1/4 cup sun-dried tomatoes drained and chopped

Instructions

  • Brown the Italian sausage in a deep skillet over medium heat. Add chopped onions halfway through. Cook until sausage is thoroughly browned.
  • Cook the rigatoni pasta in a separate pot according to package instructions to al dente. Drain well.
  • Use chicken broth to deglaze the skillet, then add heavy whipping cream and bring to a boil. Reduce to a simmer until the sauce is reduced by half.
  • Stir in Parmesan cheese, sun-dried tomatoes, and baby spinach into the skillet. Once the cheese melts and the spinach wilts, add the cooked sausage and pasta.
  • Ensure everything is well combined and season with salt and black pepper to taste. Cook briefly until heated through.
  • Serve hot, optionally garnished with extra Parmesan or fresh herbs.

Notes

Consider adding a splash of cream while reheating to maintain the creamy texture.
