Ingredients

Russet Potatoes

  • 2 Russet potatoes cut into bite-sized pieces

Dressing

  • 1 cup mayonnaise
  • 1 cup sour cream

Additional Ingredients

  • 1/2 cup bacon cooked and crumbled
  • 1 cup sharp cheddar cheese shredded
  • 1/4 cup white onion chopped
  • 2 tbsp chives chopped
  • kosher salt to taste
  • black pepper to taste
  • green onions for garnish

Instructions

  • Prepare the potatoes by cutting them into bite-sized pieces.
  • Boil the potatoes for 20-25 minutes until tender.
  • Drain and cool the potatoes in the refrigerator.
  • In a large bowl, combine mayonnaise and sour cream to make the dressing.
  • Fold in potatoes, onions, chives, half of the crumbled bacon, and shredded cheese.
  • Season with salt and black pepper, then top with additional cheese, bacon, and green onions.
