Ingredients

  • 1 whole chicken or 3 large boneless breasts cooked and chopped into bite-sized pieces
  • 1 can cream of chicken soup (10.5 oz)
  • 1 1/2 soup cans chicken broth
  • 1/4 tsp salt to taste
  • 1/2 tsp pepper to taste
  • 2 frozen 9" pie crusts thawed
  • 2 Tbsp butter

Instructions

  • Place the chicken in a pot, cover with water, and boil until cooked through. Remove, cool, and chop the meat.
  • In a mixing bowl, combine the cream of chicken soup, chicken broth, salt, pepper, and chopped chicken. Stir well to blend the flavors.
  • Grease a 9x9 baking dish and spread half of the chicken mixture on the bottom. Top with a layer of pie crust strips, dotting with butter.
  • Bake at 400 degrees Fahrenheit for 25 minutes. Remove from the oven and add the remaining chicken mixture on top. Place the remaining pie crust strips and dot with butter again.
  • Return to the oven for an additional 25 minutes or until golden brown. Let it sit for 5 minutes before serving.

Notes

To store Mama's Chicken Pie, cover it tightly with foil or transfer it to an airtight container. Refrigerate any leftovers promptly and consume within 3-4 days. For longer storage, you can freeze the pie, ensuring it is well-wrapped to prevent freezer burn. Reheat in the oven or microwave until heated through.
