Ingredients

  • 4 cups Potatoes thinly sliced and peeled
  • 2 tbsp Melted Butter
  • 1/2 tsp Salt
  • 1 lb Ground Beef
  • 10 oz Frozen Corn
  • 10-3/4 oz Condensed Cream of Celery Soup Undiluted
  • 1/3 cup Milk 2%
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Pepper
  • 1 tbsp Onion Chopped
  • 1 cup Cheddar Cheese Shredded
  • Fresh Parsley Minced, optional for garnish

Instructions

  • Preheat your oven to 400°F. Combine sliced potatoes, melted butter, and salt. Layer this mixture at the base and sides of a 13x9 inch baking dish. Bake for 25-30 minutes until potatoes are almost tender.
  • Brown the ground beef in a skillet over medium heat. Drain excess fat. Layer beef and corn over the baked potatoes.
  • In a bowl, mix cream soup, milk, garlic powder, pepper, onion, and half of the shredded cheese. Pour this over the beef.
  • Return the casserole to the oven and bake, uncovered, for 20 minutes or until heated through. Top with remaining cheese, bake for an extra 2-3 minutes, and garnish with parsley if desired.

Notes

For storing leftovers, simply cover the casserole with foil and refrigerate for up to 3 days. Reheat single servings in the microwave or reheat the whole dish in the oven.
