Ingredients

  • 2 lb Yukon Gold Potatoes scrubbed and thinly sliced or diced
  • 1/4 cup Olive Oil for frying
  • 3-4 tbsp Unsalted Butter
  • 1 Onion large, yellow or Vidalia
  • Salt to taste
  • Pepper to taste

Instructions

  • Partially cook the Yukon Gold Potatoes, then slice them thinly or dice them into 1/2-inch cubes.
  • Melt the butter and olive oil in a large skillet over medium-high heat. Add the potatoes and cook until golden brown on one side.
  • Turn the potatoes, add the onions, and continue cooking until the potatoes are well browned and the onions are caramelized.
  • Season with salt and pepper to taste, and serve immediately.

Notes

To store leftovers, refrigerate in an airtight container. Reheat in a skillet or oven until warmed through. Ready to serve as a hearty side dish or snack.
