Ingredients

Sausage Mixture

  • 1 pound ground pork sausage mild or spicy based on preference
  • 1 medium onion finely chopped (about 1 cup)
  • 1 red bell pepper diced
  • 3 cloves garlic minced

Batter

  • 4 large eggs beaten
  • 1 cup whole milk or half-and-half for extra richness
  • 1 cup all-purpose flour can use gluten-free flour as an alternative
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Cheese & Garnish

  • 2 cups Monterey Jack cheese shredded (try pepper jack for added heat)
  • 1/2 cup cheddar cheese shredded (optional for topping)
  • 2 tbsp fresh parsley or cilantro chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie plate or similar-sized baking dish with cooking spray or butter.
  • In a large skillet over medium heat, cook the sausage until no longer pink, breaking it into crumbles as it cooks (typically 5-7 minutes).
  • Add the chopped onion and bell pepper to the skillet with the sausage. Cook for about 3-4 minutes until the vegetables soften slightly. Stir in minced garlic and cook for another 30 seconds until fragrant.
  • In a large mixing bowl, whisk together eggs and milk until well combined. Gradually add flour, baking powder, salt, and black pepper, whisking until smooth.
  • Remove the sausage mixture from heat and let it cool slightly for 2-3 minutes. Fold the sausage mixture and 1 1/2 cups of Monterey Jack cheese into the batter, stirring gently until evenly distributed. Pour the entire mixture into your prepared baking dish.
  • Sprinkle the remaining Monterey Jack and cheddar cheese over the top of the pie. Bake in the preheated oven for 35-40 minutes, or until the center is set and the top is golden brown. A toothpick inserted in the center should come out clean.
  • Allow the pie to rest for 5-10 minutes before serving. Garnish with fresh parsley or cilantro before serving for a pop of color and fresh flavor.

Notes

For a healthier version, use turkey or chicken sausage instead of pork, substitute whole wheat flour for all-purpose flour, and consider using low-fat milk and reduced-fat cheese. This dish can be made ahead and refrigerated unbaked for up to 24 hours - just add 5-7 minutes to the baking time when cooking from refrigerated.
