Ingredients

  • 2 cups unsweetened shredded coconut plus extra for coating
  • 1/3 cup unsweetened cocoa powder
  • 14 oz sweetened condensed milk 1 can
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt

  • 1/2 cup dark chocolate finely chopped, for drizzling

Instructions

  • Combine the shredded coconut, cocoa powder, and salt in a large mixing bowl. Whisk thoroughly to eliminate any cocoa powder lumps.
  • Pour in the condensed milk and vanilla extract. Stir everything together until you achieve a thick, slightly sticky mixture that holds its shape when pressed.
  • Cover the bowl with plastic wrap and refrigerate for about 15 minutes to make the mixture firmer and easier to handle.
  • With slightly damp hands, roll tablespoon-sized portions of the mixture between your palms to form neat balls about 1 inch in diameter.
  • Place extra shredded coconut in a shallow dish. Roll each ball in the coconut until completely coated.
  • Arrange the completed coconut balls on a parchment-lined tray and refrigerate for at least 30 minutes to set firmly.
  • If desired, melt the chopped dark chocolate in 20-second intervals in the microwave, stirring between each. Drizzle over the chilled coconut balls for an elegant finishing touch.

Notes

For best results, use desiccated or finely shredded coconut rather than large flakes, as they bind better.
Keep your hands slightly damp when rolling the balls to prevent sticking.
Store in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.
