Ingredients

  • 1 lb Smoked sausage sliced into rounds
  • 1 Onion chopped into wedges
  • 5 Potatoes chopped into chunks
  • 5 Multi-Colored Peppers chopped into chunks
  • Olive oil
  • Paprika
  • Thyme
  • Salt
  • Pepper

Instructions

  • Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil. Place onion, potatoes, peppers, and sausage on the baking sheet.
  • Drizzle with olive oil, add thyme, paprika, salt, and pepper to taste. Toss to coat. Bake for 45-50 minutes.

Notes
