Ingredients

Ground Beef

  • 1 lb ground beef

Aromatics

  • 1 tbsp olive oil optional
  • 1 small onion
  • 2 garlic cloves

Soup Base

  • 4 cups beef broth
  • 1 (14.5 oz) diced tomatoes
  • 2 cups uncooked elbow macaroni

Add-Ins

  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard
  • 1 tsp smoked paprika optional
  • salt and black pepper to taste

Instructions

  • Brown the ground beef in a large pot.
  • Add olive oil, onion, and garlic; sauté until fragrant.
  • Pour in beef broth and diced tomatoes, simmer.
  • Stir in macaroni and cook until tender.
  • Add cheddar cheese, heavy cream, Worcestershire sauce, mustard, and smoked paprika.
  • Season with salt and pepper; serve with extra cheese and toppings.

Notes

To store leftovers, cool the soup completely and refrigerate in an airtight container for up to 3 days. You can also freeze the soup for up to 3 months. Reheat gently on the stovetop or in the microwave, stirring occasionally.
