Equipment

  • Wooden Skewers
  • Serving Platter

Ingredients

  • 3 ripe peaches preferably freestone variety, cut into 1-inch chunks
  • 8 oz fresh mozzarella pearls (or larger mozzarella cut into 1-inch cubes)
  • 1 bunch fresh basil leaves about 20-25 leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon high-quality balsamic glaze
  • 1/4 teaspoon flaky sea salt
  • freshly ground black pepper to taste
  • 12-16 wooden skewers soaked in water for 10 minutes

Instructions

  • Wash and dry all produce thoroughly. Cut peaches along the natural seam, twist to separate halves, and remove the pit. Slice into 1-inch chunks. If using larger mozzarella, cut into bite-sized cubes similar in size to your peach pieces. Gently wash basil leaves and pat dry with paper towels.
  • Begin by threading a peach chunk onto a wooden skewer. Fold a basil leaf in half and add next, followed by a piece of mozzarella. Repeat the pattern once more, ending with a peach chunk for visual appeal. Place completed skewers on a serving platter.
  • Drizzle the assembled skewers with high-quality olive oil, followed by a light zigzag of balsamic glaze. Sprinkle with flaky sea salt and freshly ground black pepper just before serving.

Notes

Select peaches that yield slightly to pressure but aren't mushy for best flavor. They should have a fragrant aroma indicating peak ripeness.
Keep the balsamic glaze in a squeeze bottle for precise application and an elegant presentation.
For stability, ensure each ingredient is centered on the skewer to prevent spinning and make for easier eating.
These skewers are best assembled within 1 hour of serving to maintain freshness and prevent wilting of the basil.
