Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a small bowl, combine the melted butter, minced garlic, chopped parsley, Italian seasoning, and salt if using. Whisk together until well incorporated and let stand for 5 minutes.
Open the tube of Pillsbury biscuits and separate them individually. Gently flatten each biscuit with your palm until it's about 3-4 inches in diameter.
Place one cube of cheese in the center of each flattened biscuit.
Carefully fold the edges of each biscuit up and around the cheese, completely sealing it inside. Pinch the seams tightly and roll each stuffed biscuit between your palms to form a ball.
Dip each biscuit ball into your garlic butter mixture, ensuring complete coverage. Then place them seam-side down on the prepared baking sheet, spacing them about 2 inches apart.
Sprinkle the Parmesan cheese over the butter-coated biscuit balls.
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.
Serve warm, optionally with marinara sauce for dipping.
