Ingredients

For the Pimento Cheese

  • 8 oz sharp cheddar cheese freshly grated
  • 4 oz cream cheese softened to room temperature
  • 1/4 cup mayonnaise Duke's recommended
  • 4 oz diced pimentos drained well
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp cayenne pepper adjust to taste
  • 1/2 tsp Worcestershire sauce
  • salt and black pepper to taste

For Serving

  • 1 bunch celery washed and cut into 3-4 inch pieces
  • paprika for garnish (optional)
  • fresh herbs for garnish (optional)

Instructions

  • Trim the ends of the celery stalks and remove any leaves. Wash thoroughly under cold running water and pat dry with paper towels. Cut into 3-4 inch pieces. For extra crispness, place cut celery in ice water for 30 minutes, then dry before filling.
  • In a medium bowl, combine the softened cream cheese and mayonnaise. Beat with a spatula or hand mixer until smooth and fluffy.
  • Mix in the garlic powder, onion powder, cayenne pepper, and Worcestershire sauce until well combined.
  • Fold in the freshly grated cheddar cheese and well-drained pimentos. Mix gently but thoroughly to ensure even distribution.
  • Add salt and freshly ground black pepper to taste, remembering that cheddar already contains salt.
  • For best flavor development, refrigerate the pimento cheese mixture for at least one hour before filling the celery.
  • Using a butter knife or small spoon, generously fill each celery piece with the pimento cheese mixture. For a more elegant presentation, use a pastry bag fitted with a star tip to pipe the filling.
  • Garnish with a sprinkle of paprika or chopped fresh herbs if desired, and arrange on a serving platter.

Notes

- The pimento cheese filling can be made up to 3 days in advance.
- For best results, fill celery no more than 2 hours before serving to maintain crispness.
- Freshly grated cheese works much better than pre-shredded, which can make the mixture grainy.
- You can use this same pimento cheese for sandwiches or as a dip for crackers and vegetables.
